It to use a few tablespoons of coconut oil in it and melt in microwave in 20 second increments and stir in between. Always comes out lovely ^^

Mine were very soupy too, because the PB was really oily. I used a little psyllium husk powder in it and the texture was perfect.

It could be the variation in peanut butter oils. But you can always reduce the butter or add more powdered sweetener or a powdered protein powder like collagen or whey protein isolate to thicken if needed.

Yes! I should have put that in the notes. A small deep bowl works best and towards the end, you may need to tilt the bowl and rotate the ball to coat the bottom.

These were wonderful! I used toothpicks for dipping, great idea, but I think I went too "heavy" on the chocolate on the first few and ran out of chocolate by the end! I am making myself a note to go easier on the chocolate at first to spread it out. I also found that by using a small ramekin to hold the chocolate it made it easier since it was small and deep. Thanks for a great recipe!

Also you can make your own confectionery sugar by whipping up your sweetener in a blender. LC baking is very expensive.

Thanks for the tip on the toothpick! Whey protein is a great sub for the bulk of powdered sweetener when you want to cut back on the sweetness.

Figured it would be similar enough, and it turned out great! I refrigerated the mixture for 15 minutes before forming into balls and this helped it firm up nicely. I also put a toothpick in each ball before freezing, which made it much easier to dip. These are tasty for sure!
